Ingredients

400 g flour (and some for milling)

100 g whole grain flour

pinch of salt

5 g dry yeast

200 g of hot water

1 tbs olive oil
Steps

Mix the two types of flour, add a pinch of salt, and the dry yeast. |

Put the flour on to a clean surface and make a large well in the centre. Pour the water in the well and add the olive oil. Start to shape the dough with circular movements by gradually adding the flour. Knead the dough until it becomes soft and elastic. |

Add some olive oil to a bowl and put the dough into it until it doubles. Cover the dough with cling film or kitchen cloth and put it in a warm place for 2 hours. |

Pre-heat the oven to 220 degrees C. |

Shape the dough gently to turn it into a loaf. Sprinkle the tray with flour and put the dough in. |

Fill another tray with water and put it in the bottom of the oven to form steam during the baking. |

Bake for about 35-40 minutes until golden brown. |

Let the bread cool before slicing it. |
