Quinoa and Spinach Salad

1 tea cup quinoa
100 g baby spinach
6 cherry tomatos
8 baked pepper
100 g Feta cheese
1 tsp mustard
2 tsp honey
2 tsp balsamic vinegar
2 ssp olive oil
salt, black pepper
juice of 1/2 lemon

An easy recipe for a healthy and nutritious salad.




Wash the quinoa well. Put it in a pot and cover with water -  the quinoa-water ratio should be 1:2. When the water starts to boil, turn the heat down and let the quinoa simmer for about 15 minutes.


Dice the cherry tomatoes and julienne the roasted peppers. Mix the quinoa with the fresh spinach, the tomatoes, and the peppers. Add feta cheese, cut in small cubes.


For the dressing - you need mustard, honey, balsamic vinegar, olive oil, lemon juice, salt, and pepper. Mix all ingredients well and add to the quinoa and the vegetables.


Serve the salad warm with sprinkled chia seeds on top.
