1 tea cup quinoa

100 g baby spinach

6 cherry tomatos

8 baked pepper

100 g Feta cheese

1 tsp mustard

2 tsp honey

2 tsp balsamic vinegar

juice of 1/2 lemon

Wash the quinoa well. Put it in a pot and cover with water - the quinoa-water ratio should be 1:2. When the water starts to boil, turn the heat down and let the quinoa simmer for about 15 minutes. |

Dice the cherry tomatoes and julienne the roasted peppers. Mix the quinoa with the fresh spinach, the tomatoes, and the peppers. Add feta cheese, cut in small cubes. |

For the dressing - you need mustard, honey, balsamic vinegar, olive oil, lemon juice, salt, and pepper. Mix all ingredients well and add to the quinoa and the vegetables. |

Serve the salad warm with sprinkled chia seeds on top. |
