Features

These Swedish chocolate cookies are maybe the tastiest I've tried recently. I was inspired for this recipe during my stay in Stockholm. They are sugar free, gluten free and dairy free. Traditional ingredients of these cookies are chocolate, cardamon and special Swedish baking syrup (Ljus sirap). Unfortunately, there isn't equivalent of this syrup in Bulgaria, so I decided to use molasses with caramel taste. Cookies are totally chewy chocolate treat.

Ingredients

Steps

1

Preheat oven to 180 degrees. Line a large baking sheet with parchment paper.

2

In a bowl mix gluten-free white flour, baking soda and sea salt.

3

In other bowl add in coconut oil, coconut sugar, cacao powder, vanilla powder and molasses. Add the dry ingredients and whisk together. Fold in the chopped chocolate.

4

Form cookies with your hands. Makes about 6 cookies. Do not flatten cookies.

5

Bake 10-12 minutes. Remove from oven and transfer to a wire rack and allow cookies to cool completely.  Cookies are even more delicious the next day.
