Ingredients

For the chocolate mountain rocks:
100 g. almond flour
3 tbsp. coconut sugar 
2 tbsp. cacao powder 
4 tbsp. coconut oil, melted
40 g. walnuts, crushed
2 drops orange essential oil
For the chocolate frosting:
50 g. cacao mass or dairy-free chocolate 
1-2 tbsp. maple syrup 
1 tsp. coconut oil
1 drop orange essential oil 
20 g. shredded coconut for garnish

Healthy chocolate mountain rocks

Features

Chocolate mountain rocks represent precious and delicious moment from my childhood in Bulgaria. It has been always a feast when my parents bought me some from the bakery. But nowadays, I decided to make healthy chocolate mountain rocks for my family. I used almond flour instead of biscuits from the store and coconut sugar instead of refined white sugar. For more Christmas mood I added a few drops of orange essential oil, which is absolutely optional. Chocolate frosting is made with unrefined cacao mass and maple syrup and some organic shredded coconut for a snowy fairy tale effect.

In a bowl whisk together almond flour, cacao powder and coconut sugar. Add drops of orange essential oil in the melted coconut oil and add to the dry mixture. Add crushed walnuts and mix well.

With hands form the mixture as mountain rocks and place them over a plate. Refrigerate for an hour.

Melt the cacao mass over a double bolier at low heat. Add coconut oil, orange essential oil and maple syrup and mix well.

Pour chocolate frosting over the mountain rocks. Sprinkle generously with shredded coconut.

Store in refrigerator and enjoy Christmas holidays.
